Alexa’s Chicken Nuggets

Chicken nuggets is defiantly on my top 5 favorite foods.  I came across this chicken nugget recipe and hope you enjoy!  I also included the recipe for the honey mustard sauce which is super easy and delish! Both my roommates and friends enjoyed this recipe. Its a great after school/ study snack 🙂

Cooking Information:
Serves 4
Cooking/prep time : approx. 30 minutes
Difficulty: Easy

Kitchen Tools:
2 large size bowls
Large skillet or deep fryer
Spoon
Cutting board and knife

Ingredients:
Wet Ingredients

4 boneless skinless chicken breasts, cut in 1 inch pieces
2 eggs, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried dill
1/2 teaspoon salt
1/2 teaspoon pepper

Dry Ingredients

2 cups self rising flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried dill
1/2 teaspoon pepper

1 1/2 cups of Peanut, Vegetable or Canola Oil.  (I use canola oil)

Honey Mustard Sauce
1/4 cup honey
2 tablespoons dijon mustard
1/4 cup mayonnaise

Directions:
1. Preheat oil in a large skillet or deep fryer over medium heat or to 350 degrees. Combine chopped chicken, eggs and spices (for the wet ingredients) in a large bowl. Mix well and let set for about 15 minutes. Combine dry ingredients together.  Then take nuggets out and bread in flour and spices.
2. Drop one by one in hot oil and fry until golden. When done, drain on paper towels.
3. For sauce, combine all ingredients in a large bowl and mix with a whisk well until mayonnaise isn’t lumpy.

Tip From Alexa: If you don’t have onion or garlic powder, you can use fresh minced garlic or onion.  You can find the conversions on http://www.food.com/library/ and search under the kitchen dictionary.  This website is a great resource for cooking!

Waffles

Waffles are a classic breakfast dish.  I found this recipe in a binder that my mom gave me, so I thought I would give it a go.  It came out light, fluffy and very yummy!  You can add chocolate chips, blueberries, Oreos or any of your favorite treats to give it a special touch.

Cooking Information:
Serves 6
Cooking/prep time : 20 minutes
Difficulty: Easy

Kitchen Tools:
Waffle Iron
Large mixing bowl
Whisk (or fork)
Measuring cups
A ladle (or 1/2 measuring cup) for pouring batter into waffle iron.

Ingredients:
2 eggs
2 cups all purpose flour
1 3/4 cup milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Sliced strawberries, butter and syrup (for garish, optional)
Non-stick cooking spray

Directions:
1. Preheat waffle iron. Beat eggs in large bowl with whisk until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.  Molto delizioso!

Tip From Mom: Keep waffles in a 200 degrees oven to keep warm.  Don’t stack the waffles because it will cause them to become mushy and it will loose the texture.

Tip From Alexa: Spray the ladle or measuring cup with non stick cooking spray to prevent batter from sticking to it.

Penne Rosa

If you know me, then you know that I LOVE going to Noodles & Company and ordering the Penne Rosa.  Its a perfect blend of penne pasta, spinach, mushrooms, tomato sauce, and cheese.  I wanted to recreate this so I did some research and used what I had on hand to make this copy-cat “college” version. ❤

Cooking Information:
Serves 4
Cooking/prep time : 15-20 minutes
Difficulty: Easy

Kitchen Tools:
Good size pot to boil pasta
Medium/large size saucepan (enough to hold 2 jars of sauce and pasta)
Cooking Spoon
Strainer (for pasta)

Ingredients:
1 box of penne pasta
1 jar (12 oz) traditional marinara sauce
1 jar (15 oz) of alfredo sauce
1 generous handful of fresh spinach
1 generous handful of fresh mushrooms (sliced)
1 tablespoon of olive oil
Parmesan cheese and red pepper flakes (garish, optional)

Directions:
1. Cook penne pasta according to the box’s instructions until al dente (firm, but not hard).  Drain and set aside.
2. Heat olive oil over medium/high heat in a medium/large size saucepan.  Once olive oil is warm, saute mushrooms for about 2-3 minutes.
3. Reduce heat to medium/low and add the tomato and alfredo sauce. Heat through stirring occasionally for about 6-10 minutes.
4. Stir in cooked penne pasta and coat.
5. Stir in spinach and let it cook just enough for it to wilt slightly.
6. Plate the dish and garnish with some Parmesan cheese and/or red pepper flakes if desired.  Serve immediately and enjoy. 🙂

Tip From Nonna:  Add a splash of olive oil or sauce to cooked pasta after straining to keep it from sticking together.

FACT: “Rosa” means pink (or rose) in Italian.  Penne Rosa gets its name from the sauce which is a tomato and cream based sauce.  The mixture of the red and the “white” cream gives it a pink (or rosa) hue.
